Join LUSH Valley and Jules Matthews for a Community Kitchen where you'll learn how to safely pressure can dry beans!
Pressure canning is an essential preservation skill for anyone interested in stocking a homegrown pantry. Canning dry beans at home saves time, reduces waste, and provides a versatile ingredient that's ready whenever you need it for soups, stews, salads, dips, and more.
In this hands-on workshop, you'll learn the fundamentals of pressure canning from jar packing, equipment use, and safe practices. Jules will guide participants through every step of the process and explain why pressure canning is required for low-acid foods such as beans.
Participants will gain the confidence to continue pressure canning at home and bring home a jar of canned beans to enjoy.
Participants should plan to pick up their finished product at LUSH Valley in the days following the workshop.

Jules Matthews is a musician and music teacher, beekeeper, quilter, artist and cat-servant who thrives on yard and house projects. For almost 30 years, she has saved seeds, canned, pressure canned, dehydrated, fermented, cooked and eaten her own home-grown food! Jules learned the value of food security when she became a young mom, and now grows a large percentage of what her family consumes every year, including meat that she raises and processes at home.
