Founded in 1688 as the official brewery to Sendai’s Date Clan, Katsuyama carries on a centuries-old samurai brewing tradition centered on poise, elegance, and balance. Located near Mount Izumigatake in NenoShiroishi—a historic region renowned since the time of warlord Date Masamune for its pristine mountain waters—Katsuyama craft their sake using premium local rice and silica-rich soft water drawn from 80 meters underground. This unique mineral balance perfectly complements their signature "Samurai-style" philosophy, yielding refined sakes crafted to compose the moment and set the scene.
