Juan Piñero Sherry Tasting: Five Styles, One Deep Dive into Jerez

Fran Astudillo from SAWM Imports will be pouring five wines from Bodegas Juan Piñero, taking us from the fresh, saline character of Manzanilla and Fino through the added maturity of Manzanilla Pasada, then into the deeper, oxidative world of Amontillado and Palo Cortado.
Tasted side by side, the differences become impossible to miss. Flor, age, oxidation, salinity, texture, concentration. Five bottles, five distinct expressions of Palomino, and a proper look at why Sherry remains one of the most fascinating wine categories in the world.
What We’re Tasting
Fresh, dry, and unmistakably coastal, with bright salinity, almond, and delicate flor character. A classic starting point for understanding the Sanlúcar style.
A more mature expression of Manzanilla with additional depth and concentration. Saline and structured, with citrus peel, almond, and subtle oxidative complexity beginning to emerge.
An old-school Fino bottled en rama, preserving more of the wine’s natural character from the cask. Dry, intense, and deeply savory with chalky minerality, almond, and remarkable length.
The tasting moves into oxidative aging here. Nutty, dry, and layered, with greater concentration, warmth, and complexity while retaining the elegance developed during its earlier biological aging.
One of Sherry’s most fascinating styles. The aromatic finesse associated with Amontillado meets the body and richness of an Oloroso, creating a wine with remarkable balance, depth, and persistence.
