The UNITE HERE Mid Atlantic Training and Scholarship Fund presents a four day basic knife skills and sauces culinary training program from October 5-8 2026. 11am-3pm Monday-Wednesday, 11am-2pm Thursday.
Students will attend all 4 days and will leave with a basic understanding of knife safety in a kitchen, learn cutting techniques, and will demonstrate these techniques while learning to sauté. This class will also highlight cooking techniques for 3 sauces. The key to safety and learning is repetition.
Learning blocks for the class are below:
- Knife safety: handling, carrying, cutting, washing
- How to safely hand the knife to someone else
- Knife sharpening: how to hone with a steal
- Cutting techniques: small, medium and large dice cuts
- Cutting techniques: rough chopping, slicing, julienne, mincing
- Sauces: Hollandaise, Mayonnaise, Bechamel / Chicken Velouté
This class is for all levels and intended for those ages 18 - 24 years old but open to all adults.
