Join chef Remi Williams of Smoke & Salt for a hands-on masterclass exploring the art of smoking, curing and salting, the traditional preservation techniques that inspired the restaurant's name and continue to shape its distinctive approach to cooking. Smoke & Salt has grown from pop-ups and a shipping-container residency at Pop Brixton into one of South London's most celebrated tasting-menu restaurants, built on a shared appreciation for exceptional ingredients and the techniques that elevate them.
Guided by Remi, you'll discover the principles behind each preservation method, learn how they can be used to build flavour, texture and depth in seasonal dishes, and gain practical skills and techniques to recreate at home.
Together, you'll help prepare a seasonal feast showcasing these time-honoured methods before sitting down to enjoy the meal as a group.
Ticket includes:
- Welcome drink
- Hands-on class learning 3 preservation techniques: smoking, curing, salting.
- Selection of dishes incorporating the ingredients prepared during the class.
