This month we will be tasting...
🍂 2010 Tibetan heicha Brick
This tea is one of the most satisfying kinds of tea for me personally. Heicha, dark tea, is my favorite category of tea and this one delivers a clean earthy taste without any of the funk of humid storage. Processed in Hubei, dry stored in Inner Mongolia and pressed into a beautifully embossed brick, this one ticks all the boxes of a tea I can enjoy everyday.
🍂 Da Jin Ya red tea Taliensis
"Big Gold Buds" lives up to its name with a fully oxidized "silver needle" pluck tea. Coming from Jinggu, these buds are large, downy, sweet and come from a wild varietal of tea plant called Camellia Taliensis. Flavors range from malty and sweet to citrusy and floral.
🍂 Zhang Ping Shui Xian roasted oolong
Zhang Ping Shui Xian is a beautiful example of an iconic varietal of tea taken in a different direction. Most people know Shui Xian as a Wuyi rock tea, heavily oxidized and roasted. Others know it as an heirloom varietal heavily cultivated into different don cong oolong teas from the Phoenix mountains. This style is a low oxidized, loosely compressed tea. Typically unroasted, this one has indeed been roasted, shifting the flavors from crisp and green to a more broody cinnamon and roasted almond note more reminiscent of its Wuyi cousin.
🍂 Huli Jing wild white tea
"Fox Spirit" wild white tea comes from one of the most unique species of tea out there, the Camellia Crassicolumna tree. This tea is the only known phenotype that naturally doesn't produce caffeine. Often made with the unopened "ya bao" buds, this tea is made from the fully emerged leaves. Crassicolumna often has an incredibly complex profile ranging from herbaceous and woody, to sweet and floral, even fruity at times.
