A one-night-only Italian × Korean vegan dining experience by Chef Mauro, featuring four exclusive courses with thoughtfully matched drink pairings.
Welcome to Chef Mauro’s Italian × Korean Fusion Supper Club at Vegan Yes — an evening where two culinary worlds come together in unexpected ways.
For one night only, Chef Mauro has created a completely new four-course plant-based tasting experience, bringing together the comfort and elegance of Italian cooking with the bold, fermented flavours of Korean cuisine.
This isn’t our everyday Vegan Yes menu. Every course has been created especially for this supper club, giving you the chance to taste unique new dishes designed exclusively for the evening.
Your 4-Course Experience
Course 1 — New Edition Bruschetta
A playful Vegan Yes twist on the Italian classic, combining homemade peanut butter, house kimchi and a delicate touch of decaf coffee powder. Served with a specially paired cocktail featuring vodka, decaf coffee, vermouth and lime.
Course 2 — Kimchi Ravioli
Italian-style ravioli meets Korea’s most iconic flavour. Delicate pasta filled with bold kimchi flavours and served with a creamy coconut yoghurt kimchi sauce — comforting, tangy and completely unexpected.
Course 3 — Kimchi Risotto
Creamy Arborio rice cooked with red kimchi and peas, finished with plant-based butter, vegan parmesan and a rich cashew and nutritional yeast cheese sauce, with a touch of gochujang for extra depth.
Course 4 — Dessert Surprise
We’re keeping the final course a secret. Expect a special plant-based dessert created exclusively for the evening, accompanied by its own complementary drink pairing.
Each course has been designed to take you somewhere different — familiar flavours reimagined through Chef Mauro’s and Dr Min's Italian × Korean approach.
