Our Kitchen Stories series welcomes some of the most exciting names in food to Piccadilly, and the host of this instalment is Australian chef Josh Niland.
Few chefs have changed the conversation around fish quite like Josh Niland. A multi-award-winning chef, author and restaurateur, Josh has reimagined how fish can be aged, butchered, cooked and enjoyed. Alongside his wife Julie, he is behind acclaimed Sydney restaurant Saint Peter, Fish Butchery and The Grand National Hotel by Saint Peter, championing a thoughtful whole-fish philosophy that has influenced kitchens around the world.
The evening will celebrate Josh’s new book, Saint Peter: Chapter & Verse, marking a decade of his pioneering restaurant. Through three expansive essays and more than 100 recipes, Josh traces the story, philosophy and inner workings of Saint Peter, revealing the craft behind his whole-fish approach and the dishes that have helped define this most singular of restaurants.
Helping steer the conversation is acclaimed photographer David Loftus, who photographed the book and has worked with some of the world's most celebrated chefs and food writers.
