Course One | Viognier Shrimp brochette with grilled pineapple, red bell pepper, cipollini onion, and a citrus-Aleppo chili gastrique. A vibrant opening course balancing smoky, sweet, and citrus notes.
Course Two | Core Red Blend Duck confit served with white beans, carrots, parsnips, and braised radicchio. A savory, comforting dish paired with a beautifully complementary red blend.
Course Three | Index Red Blend Roasted rack of lamb with a Moruno spice rub, cauliflower and pomegranate Medjadra (layered rice), and red wine fig jam. Rich spices and fruit-forward flavors come together in this memorable pairing.
Course Four | Syrah Braised beef short rib with Mole Negro, thinly sliced potato, roasted mushrooms, and Cabrales cheese. A deeply savory course featuring layered flavors and bold accompaniments.
Course Five | Rosé Citrus polenta cake with cranberry sorbet, pistachio, and rose syrup. A bright, elegant finish bringing together citrus, tart fruit, and delicate floral notes.
