The basis of soups, sauces, stews, risottos and so much more, making quality stock from scratch is a truly fundamental skill for any cook.
Making a good stock is an essential technique that many chefs — let alone home cooks — have never been properly taught. Learning how to make your own stock will not only elevate your cooking, but can also help reduce food waste, save money, and encourage a more sustainable approach to eating and cooking at home.
In this community-focused and sustainability-minded workshop, you’ll learn how to create rich, restaurant-quality beef, chicken, and vegetable stocks using organic and ethically sourced ingredients. Drawing on his background as a classically trained chef, Tim will guide participants through traditional techniques that transform simple ingredients and kitchen scraps into deeply nourishing, flavour-packed foundations for everyday cooking.
Together, we’ll explore how these versatile stocks can be used to create nourishing bone broths, comforting soups, aromatic Asian-style broths, and even a classic beef demi-glacé for enriching stews and producing restaurant-quality sauces.

Meet Tim:
Tim Greaves has more than 25 years of experience as a chef in Australia and the U.K., focused on European and Modern Australian Fine Dining. These days he focuses on sharing his skills as a teacher and running his hot sauce business 'Foraged Fire.' Tim is passionate about sustainability, minimising waste and sourcing and eating locally and an obsessive forager, fermenter and home gardener.
Our weekly farmer's market will be in full swing during your workshop, so it's worth arriving a little early to check out the stalls and maybe buy some fresh produce.
Perth City Farm is a community urban farm that supports connected, sustainable communities. Established on a former industrial site in East Perth, this polluted site has been lovingly rehabilitated by volunteers to become a Western Australian icon for environmental sustainability and community engagement. We provide space and opportunities to build community connections, and educate and enable people to live sustainably.
