Master micro-seasonality with Dyl Brentwood at Lonely Diner. Sip Giffard, Ramsbury Gin & Planteray Rum while building seasonal menus.
About this Event

A cocktail can only be as good as the quality you give to it—after all, a strawberry in January is just colour, not flavour. Join us at Lonely Diner for an exclusive masterclass on mastering hyper-local, highly variable ingredients, brought to you in partnership with Giffard, Ramsbury Gin, and Planteray Rum.

Led by Dyl Brentwood (he/any) of Halifax’s Hux Bar Bistro and former manager of Bar Kismet (awarded North America’s Most Sustainable Bar 2022), this seminar breaks down prep through the lens of critical ingredient management. Having developed over 300 cocktail recipes in the last five years, Dyl will share his signature cocktail matrix, adaptable templates, and prep backlog systems.

You'll learn how to seamlessly integrate premium liqueurs, spirits, and seasonal botanicals into a fluid menu model—giving you the practical tools to deepen relationships with local purveyors, navigate shifting growing seasons, and maximize flavor at its absolute peak.

Your ticket includes a welcome cocktail and spirit samples.

Secure your spot to elevate your prep program and transform your approach to seasonal menu design.
