About this Event
We’re very excited to welcome Gibran Cervantes to Caravan Roastery. He’s coming all the way from Veracruz, Mexico, to spend an evening with us.
Gibran farms El Equimite, a 33-hectare biodynamic farm in the cloud forest above Coatepec, at 1,200–1,300 metres. He bought his first hectare in 2006. Since then he’s turned it into one of very few Demeter-certified biodynamic coffee farms in Mexico. It’s also a working nature reserve, with more than 20 arabica varieties grown under native shade trees, fruit trees and medicinal plants. In 2022 his Gesha placed 7th at the Mexican Cup of Excellence.
Gibran is also the founder of Ensambles Cafés Mexicanos. Ensambles works with smallholder producers across Mexico to improve quality, move towards organic and regenerative farming, and connect them with roasters around the world. It’s how we source our Mexican coffees.
On the night, Gibran will talk through his process: how he farms, the biodynamic thinking behind it, and how he approaches fermentation and drying. There’ll be plenty of time for questions.
