Join Annie M. of Galloway’s Wholesome Foods for Across the Indian Ocean: Exploring East African Flavours, a hands-on cooking experience inspired by the flavours, memories and traditions connecting India and East Africa.
Annie’s grandparents were born in India before making their home in East Africa, where her family built a rich culinary tradition blending ingredients, spices and techniques from both regions. In this class, Annie will share the foods that shaped her childhood and continue to inspire her cooking today.
We’ll begin with a taste of East Africa, enjoying samosas or crispy cassava fries alongside a refreshing mango and passion fruit juice.
Then it’s time to cook! Together, we’ll prepare:
Pigeon Pea Pilaff
Fragrant rice cooked with pigeon peas and creamy coconut milk for a comforting and aromatic dish.
Kuku Paka
Tender chicken simmered in a rich coconut curry with warming spices, a beloved East African dish with Indian influences.
Coconut Chutney
A fresh, creamy accompaniment that adds brightness and contrast to the meal.
Once the cooking is complete, we’ll sit down together to enjoy what we’ve prepared, share stories and experience the flavours that have travelled across generations and across the Indian Ocean.
