You’ll prepare landrace spoonbread with black walnut honey butter, warm and nostalgic, then move on to the main course—seared elk medallions with a blackberry-port reduction, rich, tender, and deeply rooted in the flavors of the forest. Alongside, we’ll make a rustic wilted greens salad with bacon vinaigrette, a dish both simple and deeply satisfying. To finish, you’ll create a blackberry galette with acorn shortbread crust, a dessert that’s as wild and elegant as the landscape itself.
