We talk about terroir all the time with wine. But what about Tequila?
This Thursday’s tasting is a particularly special one. We’re opening three exceptional bottles from Casa Santanera for you to sip and taste some truly excpetional Tequilas.
It’s a rare opportunity to taste these tequilas side-by-side, discover what makes them special, and explore a producer that asks us to think about tequila in much the same way we think about fine wine.
Before tequila is a spirit, it begins as a plant; agave growing for years in a particular soil, climate and landscape. Santanera puts that agriculture and provenance at the heart of what it does, with a meticulous approach to organic farming, individual agave plots and small-batch production.
In other words: this is tequila worth slowing down for.
We’ll be pouring:
Santanera – Kosher Blanco
We begin with tequila in its purest form: unaged and without the influence of oak. Santanera’s Kosher Blanco puts cooked agave front and center, surrounded by citrus, herbal, botanical and peppery notes. It’s our starting point for understanding the raw material behind everything that follows.
Santanera – Blanco "Lote Partida"
Now we get into something particularly special. Lote Partida was the eighth and final release in Santanera’s Organic Terroir collection produced at Destilería 3 Mujeres, the distillery where Santanera spent eight years developing its craft. Produced as a micro-batch, it captures a specific agave source and a particular moment in the evolution of Santanera.
Santanera – "Selección de Bosques No. 2" Añejo
And finally, a tequila we’re especially excited to open. Made from seven-year-old organic agave, Selección de Bosques No. 2 spent 28 months maturing underground in carefully selected American and French oak. It’s a complex, contemplative expression that shows what happens when exceptional agave, wood and patience come together.
