• Cauliflower velouté - Silky cauliflower velouté, sage, and toasted rosemary focaccia croutons
• Beetroot carpaccio - Roasted beetroot, blood orange sorbet, fennel, and crispy capers
• Chickpea fritters - Crispy chickpea fritters, roasted pepper purée, and basil oil
• Polenta crostino - Crispy polenta, saffron artichoke cream, braised artichoke and black Gaeta olives
Mains
• Tortellini di zucca in brood - Butternut squash tortellini, porcini broth, crispy sage and extra virgin olive oil
• Baby aubergines ripiene - Roasted baby aubergines filled with caponata, tomato sauce, basil oil and toasted pine nuts.
• Fregola risottata - Toasted fregola with a Nocellara olive and green pepper sugo, and fresh herbs
• Oyster mushrooms - Roasted oyster mushrooms, crushed rosemary potatoes, roasted garlic cream, vegetable jus and salsa verde
Deserts
• Apple & berries crostata - Warm apple and raspberry crostata and vanilla cream
• Mango and pear sorbet - Served with fresh seasonal fruit
• Warm Chocolate Tortino - Warm dark chocolate tortino, amarena cherry compote and chocolate sauce
• Caramel biscuit cheesecake - Silky biscuit cheesecake, rum- caramelised banana and cinnamon
