Two cooks. One table. One night only.On Saturday 14 November, The Private Table brings together two kitchens for a single five course dinner in Kingston. Rob Tucker, who spent 33 years at sea in the Royal Canadian Navy before turning to professional cooking, is joined by guest cook Cathy Goodwin. She takes two of the five courses, he takes the others, and the menu is built around what Ontario gives us in November: squash, pork, lamb and apples.
The menu
I · Squash Velouté — brown butter, spiced pepitas, crème fraîche
II · Cider-Glazed Pork Belly — roasted garlic parsnip purée, grainy mustard, braised red cabbage and apple, pickled red onion on the crackling
III · Herb-Crusted Rack of Ontario Lamb — port-rosemary jus, potato dauphinoise, glazed rainbow carrots
IV · Ontario Cheese Course — spiced honey, walnut crostini
V · Warm Apple and Brioche Tart — toasted almond, apple jelly glaze, ginger cider caramel, candied ginger chantilly
Wine is poured with every course: Crémant to open, a Niagara Riesling, a Niagara Cabernet Franc, and a Riesling Icewine with the last course.
Our guest speaker
Martin Weinhold joins us between courses to talk about WorkSpace Canada, the documentary project he began in 2006 to photograph Canadians at work. Four thousand of his photographs now live in Library and Archives Canada. He grew up in East Berlin and works between Berlin and Canada.

Good to know

2. We will have someone shooting photographs and video through the evening. If you would rather not appear in any of it, say so and you will be left out, no explanation needed
3. There is no dress code beyond making an evening of it
4. It is one seating and it starts at seven, so arriving by 6:45 matters
The Private Table. Dinner is not just a meal, it is an act of intention.
