Cook with Elsy
Elsy has taught Haitian culinary classes in Portland for eight years, showing Oregonians how to use simple, fresh ingredients to amplify flavor. Her motto is “Simpler Tastes Better," and you’ll put it into practice while cooking together.
Learn to prepare two doughs for Haitian empanadas: pâte brisée (basic dough) and pâte feuilletée (puff pastry). Make four fillings, sausage, chicken, ground beef, and vegan mashed eggplant, and learn two popular Haitian condiments: epis, a fresh marinade Haitians use to add flavor to foods, and pikliz, a spicy, tangy relish made with cabbage, onions, carrots, lime juice, salt, and Scotch bonnet or habanero pepper.
What to expect?
Meet new people, learn about Haiti and Haitian culture, explore new flavors, and munch on bites as you cook, have fun, and eat together.
Open to anyone 12 and up. Babies and toddlers can be a distraction, so please don’t bring them. Bring a good attitude and a smile.
See you Friday, December 11!
