Breadfruit crossed oceans before it ever reached a plate like this. Carried from the Pacific to the Caribbean, overlooked for centuries, and now one of the most nourishing and resilient foods on earth — it's the kind of ingredient that deserves a full menu built around it. On October 17th, it gets one.
Spice: Breadfruit is the third edition of the Spice Dinner Series — an intimate, five-course dining experience designed by Nuola, where African and Caribbean cooking is given the seriousness, technique, and design it has always deserved.
The menu is designed by Chef Jae-Anthony Dougan-Holder, a Top Chef Canada alum and Food Network Canada judge whose modern Afro-Caribbean cooking has put him on the national stage. Five courses. One ingredient, reimagined from first bite to last.
The bar is designed by Shane McClean — award-winning mixologist and Barbados' Culinary Ambassador since 2018 — in partnership with Mount Gay Rum, the world's oldest rum distillery. Expect cocktails with a genuine point of view. Spirit-free pairings are available on request, built with the same care, never as an afterthought.

Before you book
Doors open at 4:00 PM. Dinner service begins at 5:00 PM — one seating, start to finish, so late arrivals will miss courses.
Dietary preferences and restrictions can be accommodated with at least 7 days' notice — please note them at checkout or email [email protected] no later than Saturday October 10th, 2026.
Photographs and video will be taken throughout the evening. In attending our events, you grant permission to Nuola to use photographs and/or video of you in publications, news releases, online, and in other communications related to the mission of Nuola.
