Taste your way through the lineup, discover the people and places behind each pour, and settle in for a night of sake, food and Japanese sounds.

ABOUT CHITOSETSURU SAKE BREWERY ( HOKKAIDO )
Chitosetsuru Sake Brewery is the oldest sake brewery in Hokkaido. In recent years, the brewery has shifted from large-scale production to small-batch brewing. This cup sake was created because they wanted people to enjoy more sake during times of change. Hokkaido is famous for its food, but sake still has room to grow. Through this product, they would love for people not only in Japan but all over the world to get to know Hokkaido sake.
ABOUT KIKUNOTSUKASA SHUZO ( TOHOKU )
Forget the fruit bombs. Kikunotsukasa is pure, liquid crystal from the frozen heart of Iwate.
Brewed in the dead of winter by the legendary Nambu Toji guild, this is razor-sharp sake tradition stripped of all the noise. It delivers a bone-dry, flawless finish built exclusively to elevate fresh seafood.
ABOUT KANEI SHUZOTEN ( KANTO )
This Kanagawa powerhouse uses an innovative brewing process that streams classical melodies to the koji mold during fermentation.
Brewed with mineral-rich underground spring waters from the Tanzawa Mountains, it delivers a beautifully crisp, structured profile with a clean mineral spine. The absolute perfect match for smoky yakitori skewers or crisp vegetable tempura.
ABOUT MIYASAKA BREWING COMPANY ( CHUBU )
Nestled in the breathtaking Suwa region of Nagano Prefecture, high in the Japanese Alps, Masumi has been brewing since 1662. But their defining mark on history came in 1946 with the discovery of Yeast No. 7 in their cellars. Renowned for its gentle, elegant fruit aromatics and incredible stability, Yeast No. 7 became the golden standard for master brewers across the entire nation.
ABOUT MIYOSHINO BREWING ( KANSAI )
Hailing from Nara, the spiritual birthplace of sake, Miyoshino Brewing (Hanatomoe) is rewriting modern dining rules by throwing out the modern playbook. They brew with zero temperature control, wild ambient yeasts, and ancient 15th-century Bodaimoto methods. The result is a total umami bomb packed with wild, vibrant acidity. It’s a deeply intellectual pour built to cut through premium marbled Wagyu or stand up to complex, smoky dishes.
ABOUT KANEMITSU SHUZO ( CHUGOKU )
By abandoning mass production in favor of tight, micro-batch fermentations, they control every variable to achieve flawless equilibrium.
Expect a brilliantly balanced, subtly juicy profile with a pristine, elegant spine.
ABOUT SENTO SHUZO ( SHIKOKU )
Built specifically to thrive alongside fresh catches, this bone-dry, razor-sharp sake delivers a stunningly clean and refreshing finish.
It's the ultimate palate cleanser, crafted to pair flawlessly with rich kingfish sashimi, ocean trout, or pristine local rock oysters.
ABOUT FUKUDA SHUZO (KYUSHU)
Operating since 1688 on the coastal edge of Hirado Island, this family-run powerhouse delivers a beautifully structured expression crafted from premium Yamada Nishiki rice.
Expect a vibrant profile with a crisp finish and a subtle mineral spine.

Bar Selecta is an intimate vinyl listening bar tucked behind Glenferrie Road in Hawthorn. Inspired by Japanese kissaten culture, it’s a space where music, cocktails and atmosphere move as one—with audiophile sound, curated vinyl sets and a focus on slow, intentional hospitality.
Expect refined drinks, deep cuts and familiar favourites, all designed for relaxing times with good friends.
