What happens when sake meets Taiwanese food?
In this edition of Sake for Wine Lovers, we will taste 6 different sakes alongside 4 Taiwanese dishes and 1 sweet, exploring how different sake styles interact with flavour, texture, richness, umami, seasoning and spice.
WHAT WE’LL TASTE
6 Curated Sakes
A selection of different sake styles chosen to show how structure, aroma, sweetness, acidity, umami, alcohol and texture can influence food pairing.
You will taste the sakes both on their own and alongside food to compare how each pairing changes the experience.

THE FOOD
4 Taiwanese Dishes + 1 Sweet
For this edition, the food will be prepared in collaboration with Lawrence, a passionate food enthusiast and home cook.
His Taiwanese dishes have been selected to give us a range of flavours and textures to experiment with.
- Taiwanese Smashed Cucumber Salad
- Taiwanese Braised Cold Platter
Pork or beef / egg / seaweed / bean - Steamed Sea Bass with Rice Wine, Ginger, Spring Onion and Glue Berry (Cordia dichotoma)
- Three Cup Chicken
Chicken stir-fried with soy sauce, rice wine, sesame oil and Asian basil - Sweet pairing — to be announced

Kazumi — Host & Sake Educator
Kazumi is a WSET Certified Sake Educator, DipWSET and founder of Grape & Rice.
Her approach to sake education is strongly influenced by the world of wine, helping wine lovers understand sake through structure, comparison and cause and effect.
Lawrence — Food Collaborator
Lawrence is a passionate food enthusiast and home cook who will prepare the Taiwanese dishes for this edition of Sake Pairing Lab. He is also a passionate wine and sake lover.
Together, Kazumi and Lawrence will explore how different styles of sake interact with the flavours, textures and seasonings found across the menu.
