For the third instalment of Crossroads, Mió’s Brand Director Dr Fabiana Carvalho invites us to take a closer look at what flavour really is, and how our senses shape the way we experience it.
A neuroscientist whose research through The Coffee Sensorium explores multisensory flavour perception and specialty coffee, Fabiana will explore the difference between sensation and perception, how our senses influence flavour identification, and why something as simple as a colour can change the way we taste.
The session will move from a short presentation and Q&A into an interactive cupping using The Coffee Garden of Forking Paths, Fabiana’s card-based sensory game, inviting us to think differently about how we describe, experience and communicate flavour.
40 minutes of flavour, perception and coffee, followed by a hands-on tasting.
