There’s something about a homemade pie that makes a table feel special—and once you understand the techniques behind a great crust, filling and finish, it becomes a skill you can use for years.
Join us at Chef’s Table Studios in Largo for a hands-on pie workshop designed to take the intimidation out of baking pie from scratch.
In this approximately 3-hour workshop, you’ll work through the process from dough to finished pie while learning the techniques that make the difference between a soggy, frustrating pie and one you’ll actually be proud to bring to the table.
Each guest will make their own full-size seasonal pie from scratch to take home, while we work together through the fundamentals of pie dough, filling, rolling, shaping and decorative finishes.
What You’ll Learn

- How to make a tender, flaky all-butter pie crust
- How to properly mix and handle dough without overworking it
- Rolling dough evenly and transferring it into the pie plate
- Crimping and finishing pie edges
- How to create a classic lattice crust
- Building a seasonal fruit filling with the right balance of sweetness, thickener and flavor
- How to avoid a soggy bottom
- How to tell when your pie is actually finished baking
- Tips for cooling, storing and serving your finished pie
- When and why to blind bake a pie crust
We’ll also discuss the differences between fruit pies, custard-style pies and other common holiday pies so you can take these techniques home and use them well beyond this class.
Hands-On From Start to Finish
This isn’t a watch-the-chef-and-take-notes kind of class.
You’ll be rolling dough, shaping crust, building filling and assembling your own pie right alongside me.
Our featured pie will be a seasonal apple lattice pie, giving you the opportunity to practice the techniques most people struggle with at home.
A finished pie will also be available during class so we can talk about texture, doneness and what a properly baked crust and filling should look like before you take yours home.

About Your Instructor
This workshop is led by Amanda Rice, culinary producer, chef and food stylist, with more than 13 years of experience working in culinary television, food styling, recipe development, product demonstrations and commercial food production.
The workshop takes place inside Chef’s Table Studios, a professional food-focused kitchen and content studio in Largo.
