Chesapeake oyster on the half shell, green apple and cucumber granita, preserved lemon mignonette, fresh dill.
COURSE II | SEAFOOD
Scallops of the Levant
Paired with Old Westminster Salt
Pan-seared sea scallops, silky cauliflower-tahini purée, charred lemon, crispy capers, parsley oil and sumac.
COURSE III | GARDEN
Autumn in the Mediterranean
Paired with Old Westminster Orange
Honey-roasted delicata squash, whipped labneh, golden berries, pomegranate, toasted pumpkin seeds, sage and orange-blossom vinaigrette.
COURSE IV | MAIN
The Sultan’s Short Rib
Paired with Old Westminster Pepper
Slow-braised boneless beef short rib, pomegranate-red wine reduction, saffron freekeh, roasted baby carrots, crispy shallots and fresh thyme.
