The Southern Heart: Caramelized Lentil Mjadra & Cabbage Salad
Step into the world of Lebanese cooking with Douaa Suleiman. Discover the comforting, plant-based flavors of Southern Lebanon - healthy, budget-friendly, and deeply flavourful!
Join us for an interactive cooking demonstration to master Mjadra Hamra, a signature village staple built on the magic of deeply caramelized onions, brown lentils, and coarse bulgur wheat. Learn the traditional South Lebanese technique of slow browning onions for a rich, smoky depth. Participants will also get hands-on experience preparing a crisp, traditional cabbage and tomato salad with a garlic-lemon dressing, wrapping up the session with a warm, shared communal tasting.
Douaa Suleiman is an artisanal food creator and founder of Spreadology (stone grinded spreads). Rooted in her Southern Lebanese heritage, she is passionate about sharing the vibrant, plant-based flavors, slow-simmered traditions, and rich cultural stories of everyday village cooking.
