Ready to pipe, fill, and master one of the most iconic pastries in the world? In this 3-hour class, join pastry chef Shanna Avila of Crumbs & Crumbles Bakery as she demystifies the macaron—those delicate, crisp-on-the-outside, chewy-in-the-center French cookies. You’ll learn the techniques behind consistent results, troubleshoot common challenges, and leave with beautifully filled macarons ready to share (or keep!).
What’s on the menu:
Macaron Batter (French Method)
Learn how to properly whip egg whites, fold almond flour into the meringue, and master macaronage for smooth, evenly shaped shells.
Piping & Resting
Practice piping uniform circles, releasing air bubbles, and preparing trays for baking. We’ll cover resting time and when it matters.
Baking & Troubleshooting
Discover how oven temperature, humidity, and technique affect feet, texture, and color—and how to adjust for perfect results.
Buttercream & Fillings
Make classic buttercream and learn how to pair fillings like fruit, chocolate, or caramel for balanced flavor.
By the end of class, you’ll understand every step of the macaron process—from meringue to macaronage to perfect fillings—so you can confidently recreate these elegant cookies at home.
This will be an interactive demonstration class and will last about 3 hours.
Everyone will receive a booklet with information from the class and a 10% off coupon to be used in the Nibblins store. Please see our FAQs for more information and the cancellation policy.
