Blurb: Forget the overpriced tapas bar: Spanish small bites are well within your reach.
What’s on the Menu:
Pinchos Morunos (Moorish Pork Tenderloin Bites)
Braised Leeks in Spanish Olive Oil
Shrimp with Garlic & Paprika
Spanish Roasted Vegetables in Sherry Vinegar
There's a reason the Spanish invented a whole culture around small plates. From the pintxo bars of San Sebastián to the tiled tabernas of Seville, tapas aren't just food: they're a philosophy of gathering, grazing and lingering with good company. Join Milk Street's Josh Mamaclay for a hands-on class that explores the bold flavors and techniques behind some of Spain's most beloved bites.
You'll start with pinchos morunos, pork tenderloin bites that trace their origins to the Moorish spice routes of southern Spain. Fragrant with cumin, coriander and smoked paprika, these super-savory snacks are leveled up with a good sear and a punchy lemon-honey glaze. We'll tackle gambas al ajillo, the garlicky shrimp dish that appears on nearly every bar menu from Madrid to Málaga, getting the technique just right so the oil becomes a richly flavorful sauce in its own right. A medley of roasted vegetables finished in sherry vinegar follows, teaching you how acid can transform a simple dish into something bright and complex. Finally, braised leeks in the best-quality Spanish olive oil, served atop crunchy olive oil tortas, will correct any misguided ideas that vegetables play second fiddle on the Spanish table.
Throughout the class, Josh will share the regional stories and cultural context behind each dish, giving you not just a set of recipes but a genuine feel for the rhythms of Spanish cooking. And if you thought we’d get through an entire Spanish cooking class without a tasting of some of Josh’s favorite tinned fish, think again.
At this hands-on class, you’ll work in pairs at fully equipped cooking stations with the guidance of your lead instructor. In addition to hands-on cooking, the class will include demonstrations and tastings. We conclude with a family-style meal with complimentary wine, beer and and dessert. Come with take-home containers: there are usually leftovers! Attendees receive copies of all the recipes you make and a copy of the most recent issue of Milk Street Magazine. Plus, in-person class attendees will receive a 20% discount on their next purchase at .
This class can be adapted to be suitable for most diets, though it is not ideal for vegans.
About your instructor: Josh Mamaclay has been fascinated by flavor since he first dove into the back of the pantry at 10 years old. His passion for food brought him to Johnson & Wales University in Providence, Rhode Island, where he earned his bachelor's degree in culinary arts and food service management. Since then, Josh has worked in pizza joints, fine dining restaurants and a chocolate factory. He has developed recipes for meal kit delivery brands like Purple Carrot and TB12 and served as the Marketing and Engagement Manager at Curio Spice Co. When he’s not busy cooking, you can find him painstakingly styling and photographing food, singing with his husband while strumming his ukulele, or leading intrepid adventurers through a fantasy-filled game of Dungeons & Dragons.
