FIELD Porcini & Chanterelle Girasoli Brown butter, crispy sage, roasted wild mushrooms, Parmigiano-Reggiano, and toasted hazelnut. III. ORCHARD Cider-Glazed Pork Belly Apple mostarda, celery root purée, pickled mustard seed, and pork jus. IV.
