Join cacao producer and chocolate maker Danielle de Kiserre of Origen Cacao for an evening exploring the extraordinary diversity of Colombian cacao through tasting, storytelling and conversation.
Danielle came to Colombia more than 12 years ago from Los Angeles and eventually made a home in the mountains of Antioquia, where she now lives on a 300 acre nature reserve that is also home to her cacao farm, chocolate factory, rivers, forest, wildlife and a rather chaotic collection of animals.
What began as a search for really good Colombian chocolate slowly turned into something much bigger. Danielle began growing cacao, learning to make chocolate, working with Indigenous cacao growers and producers from different regions of Colombia, and exploring how genetics, fermentation, roasting and place shape the flavor of cacao.
During the evening, we’ll taste cacao and chocolate from several regions of Colombia, talk about how cacao is grown and processed, and explore why cacao from one region can taste completely different from cacao grown somewhere else.
We’ll also taste fresh cacao fruit and meet a few lesser known relatives of cacao, including cupuaçu and macambo.
Expect plenty of tasting, questions, stories from the farm and a firsthand look at what happens between the cacao tree and the chocolate in your hands.
