We’re closing out Cowboy Night Market with one final collaboration on Wednesday, October 14th.Chef Nick Bognar of iNDO is welcoming Oklahoma City’s Chef Jeff Chanchaleune of Mādera for a one-night-only Cowboy Night Market collaboration at iNDO.
After meeting during James Beard Awards weekend, the two chefs knew they wanted to cook together. Both were named 2026 James Beard Award finalists, and now they’re bringing that collaboration to St. Louis for the final Cowboy Night Market of the season.
Expect a special menu celebrating the Thai and Lao flavors, family recipes, and experiences that have shaped their cooking, all through the live-fire, experimental spirit of Cowboy Night Market.
