While Chef Dawn is away our cafe will be closed for regular service, allowing us to shake up the space for exclusive pop-up events like this one-night-only Thai Takeover cooking class where Chef Chaat will bring the soul of his childhood home to your plate.
Growing up in Thailand, Chaat spent his youth immersed in the sensory overload of bustling night markets and vibrant street stalls. This exclusive menu is a deeply personal collection of his absolute favorite dishes growing up—the comfort foods, fierce family recipes, and bold flavors that inspired his culinary passion.
If you have ever wanted to master the vibrant, fiery, and aromatic dishes of Northeastern Thailand (Isaan), this is your chance. We will be stepping away from our usual Italian menu to take a deep dive into authentic Thai street food, sharing professional kitchen secrets, cooking techniques, and flavor-balancing tricks you can easily take back to your own kitchen. At the end of the night, we’ll gather around the table for family-style feast, enjoying the dishes we demonstrated and learned about.
What You Will Learn to Make:
* Som Tum Thai (Green Papaya Salad): Learn to balance sour, sweet, spicy, and salty flavors using a traditional mortar and pestle.
* Larb Moo (Spicy Minced Pork Salad): Master the essential technique of making toasted rice powder and integrating fresh herbs.
* Authentic Sticky Rice and Sweet Sticky Rice: Discover the traditional method for soaking and steaming perfect sticky rice using bamboo baskets.
* Kor Moo Yang (Thai Grilled Pork Jowl): Feast on the quintessential meat dish of the region.
* The iconic Mango Sticky Rice: Perfect dessert to end the night.

Details/policies:
* Classes are ~3-3.5 hours.
* This is a combination demonstration-style/hands-on participation class (i.e. some of the recipes will be demonstrated by the chef instructor with the opportunity for hands-on student participation for selected recipes/steps)
* This class is limited to 16 students
* Class will conclude with students enjoying a dinner of all the recipes prepared in class.
* Ticket price includes cooking instruction, recipes, and dinner. Beer/wine and soft drinks available to purchase by the glass/bottle/can during class.
