Last spring, we explored the world of Mexican Rum in a class at Bridgeview, and the question that kept coming up was how to use each spirit in a cocktail. While we could speculate as we sipped these delicious rums, it became clear a deeper exploration of the rich and varied flavors of Mexican rums was in order. In this class, we will explore how to use the sugarcane spirits of Mexico in an array of different cocktails. From the traditional Charandas and Oaxacan Aguardientes to the more modern spirits, expect to be treated to the whole range of rums. Cocktails will include variations on classic rum drinks, modern bartender inventions, and possibly even original creations, each molded to the specific spirit at its core.
