Whether it is for structural integrity or just for beauty, braided bread is as stunning as it is tasty! Learn how to make scali dough and braid both scali and challah. Of course, the best part will be baking and eating your creations.
1. Learn Fundamentals of Scali & Challah: Students will learn the differences between scali and challah bread, how to test when the dough is done mixing/proofing/baking, and how to tell whether a dough is suitable for braiding.
2. Shaping Techniques: Become familiar with the feeling of dough in your hands as you learn the proper techniques to boule, stretch, and braid dough
3. Braiding Skills: We will go over two strand, three strand, six strand, and nine strand braid techniques.
4. Proof and Bake: Learn how to tell when bread is properly risen, and the characteristics of over-proofing and under-proofing. Observe the differences in brushing with egg wash, heavy cream, and oil before the braided dough goes into the oven, and practice different baking techniques that will work in a standard home oven for professional bakery results.
5. Professional Tips and Tricks: Gain insider tips for achieving professional-looking results, troubleshoot old issues, and utilize new tools that could just change your bread game
Each student will leave class with each one small bread for each braid, quart of starter, a braiding bread recipe, and starter feeding instructions.
