About Rick Stein's Cookery Course:
‘I’ve been cooking at home and as a chef for the last 60 years, in the early days just copying my parents’ simple British dishes, then making every type of seafood dish at the restaurant as well as recipes from my travels all round the world. I’ve learned a few things along the way – and made some mistakes. This book is a chance to share what I now know about cooking, from the simplest processes like scrambled eggs to boning a chicken or making a soufflé or a beef Wellington and everything in between.'
Rick Stein has been cooking for the last 60 years. Now, for the first time, he shares his essential cookery course in this new BBC Book. Including 150 recipes, the majority revised and updated classics and some new ones too, accompanied by step-by-step techniques photography, Rick Stein’s Cookery Course goes right back to basics and brings together a lifetime of cooking expertise into one essential volume.
With chapters focusing on main ingredients - eggs & dairy, vegetables, fish & shellfish, meat & poultry, pulses & grains - this is Rick’s most comprehensive book to date, featuring recipes big and small, each one accompanied by insightful tips and personal anecdotes from one of Britain's best-loved chefs.

Recipes include a Simple Risotto and a Twice Baked Crab and Emmental Souffle, Smoked Haddock and Spinach Pancakes and a Spanish Chicken Traybake – all accompanied by anecdotes and tips. Rick also outlines recipes and techniques from a lifetime in the kitchen his rules for success in the kitchen – planning, organisation, preparation, using the best ingredients you can afford (preferably in season), trusting your instincts and keep tasting.
