About this Event
Our quest for koji excellence continues!
We’re very excited to welcome our dear friend Janine Saco of Skurnik back to Spencer & Lynn for an evening dedicated to sake and one of the things that makes the category so endlessly fascinating: the conversation between centuries of tradition and a new generation of ideas.
Sake brewing is built on knowledge passed down over hundreds of years, but that doesn’t mean it stands still. Some of the most exciting producers working in Japan today are looking backward and forward at the same time, drawing on ancient techniques like **Kimoto and Mizumoto** while exploring different rice varieties, polishing levels, unpasteurized Nama sake and distinctly modern approaches to brewing.
Janine will guide us through seven very different sakes that tell that story.
Along the way, we’ll dig into koji, rice, water, yeast, polishing and fermentation, how those decisions shape what ends up in your glass, and why techniques developed centuries ago remain so relevant to great sake being made today.
If sake is completely new to you, perfect. If you already keep a bottle or two in the fridge at all times, even better. This will be an approachable deep dive into the history, technique and incredible range of sake, with plenty to taste along the way.
