Travis McConnell is an accomplished chef, and currently leads the Artisanal Butchery Program at Brightwater. He is passionate about the processes behind our food and making the most of every cut. For this special dinner, he’ll bring that philosophy to the table with thoughtfully crafted dishes that highlight the creativity of whole-animal cooking and the best of the fall harvest.
