Chef Theo Randall has curated an exclusive menu perfectly matched with wines from Planeta, a renowned family-owned Sicilian winery.
Begin your journey with a glass of Brut Metodo Classico, served as an aperitivo.
For the antipasto, enjoy insalata di polpo, tender octopus with potatoes, celery, capers, parsley, rocket and lemon, beautifully paired with Cometa Planeta.
For the primo, savour mezze maniche alla Norma, pasta with slow-cooked aubergines, tomatoes, basil and ricotta salata, served alongside Eruzione 1614 Etna Nerello Mascalese.
Savour the secondo, Cognilio, rabbit slow cooked with red peppers, tomato and white wine, accompanied by mixed greens and potato purée, complemented by both Didacus Cabernet Franc and Syrah Maroccoli.
