ABOUT THE CUISINE

Omani cuisine is deeply shaped by the country’s diverse geography, from the fertile coastal plains along the Arabian Sea to the rugged mountains and vast desert interiors. This variety influences the ingredients used, from fresh seafood along the coast to dates, grains, and spices in inland areas. Traditional Omani food emphasizes aromatic flavors, often balancing spices like cardamom, saffron, and turmeric with simple, locally sourced ingredients. 


ABOUT THE CHEF

A message from our Chef Hani:

“My name is Hani, and I come from the Sultanate of Oman — a beautiful Gulf country with a rich history, deep-rooted traditions, and a vibrant culinary culture. My mum taught me to cook – she is Egyptian and I really love Egyptian food. My dad was from Oman, and I think this has helped me create my own type of cuisine – a mix of Egyptian and Omani food. My dad also loved to cook, so I had two very good teachers. I improved my cooking skills through observing and working with chefs in my restaurant business. Now I’m in the UK, I’m starting a new chapter and bringing with me the flavours of Oman. I hope to open my own restaurant business in London one day. Omani cuisine blends Asian influences with aromatic spices and herbs that bring warmth and depth to every dish, like one of our dishes today, ‘Makboos’. I hope to share not only delicious food, but also the soul of Omani hospitality. It is my honour to serve as a culinary ambassador for my homeland — to connect people, cultures, and communities, one dish at a time.”

  • Shorba (Oat and Chicken Soup with Vermicelli) | Meat (Chicken); Celery, Gluten (Wheat), Milk
  • Omani Samosa | Meat (Beef) and Vegetarian; Milk, Gluten (Wheat), Sulphites
  • Vegetable Saloona (Vegetable Stew with Dried Lime) | Vegetarian; Celery, Milk
  • Makbous (Spiced Rice Pilaf) | Vegetarian; Celery, Milk
  • Tuna Salad | Fish (Tuna); Fish, Sulphites
  • Omani Khabeesa (Rose and Saffron Dessert) | Vegetarian; Milk, Gluten (Wheat), Tree Nuts (Almonds)

This menu contains meat (chicken and beef) and fish (tuna). Allergens include: celery, fish, gluten, milk, sulphites, tree nuts.

Please let us know if you have any specific dietary requirements so our team is aware ahead of the class, but kindly note that we will not be substituting any ingredients to accommodate dietary needs, so please only book into classes that suit your dietary requirements.

THE CLASS FORMAT

Our cookery classes are family-style - meaning everyone works together to prepare the dishes as a team.

While you’ll be asked to choose one dish to focus on, you’ll have the opportunity to move around the kitchen, help with other dishes, and learn from each recipe. It’s a fun, social, and collaborative way to cook! At the end of the class, you’ll sit down with the chef, class facilitator and volunteers to enjoy the delicious meal you’ve created together.
