A deep dive into the world of Mexican chillies

Chillies are at the heart of Mexican cuisine - and they’re full of flavour, not just fire. Each chilli variety brings its own personality: from smoky and earthy to fruity, floral, and sweet. In this masterclass, we’ll explore the dried chillies most commonly used in Mexican cooking, and reveal what they look and taste like in their fresh form, too. You’ll learn how factors like soil, sun, and water shape the flavour and heat of each chile, and how to embrace these natural variations rather than standardise them away. We’ll also take you inside the chiles used in Chili Maven’s salsa macha and mole, so you can experience how these ingredients transform when blended with nuts, seeds, spices, and oil, and walk away with a deeper appreciation for the layers of flavour behind every spoonful.
All profits from this event will be donated to the Immigrant Defense Project (IDP).
Founded nearly 30 years ago, IDP works to combat the human rights crisis created by the mass criminalization, detention, and deportation of immigrants in the United States. As immigration enforcement has intensified—particularly through the actions of U.S. Immigration and Customs Enforcement (ICE)—many immigrant communities face increasing risks of detention, family separation, and deportation.
Through legal advice and training, impact litigation, policy advocacy, community defense, and strategic communications, IDP fights to protect the rights of immigrants and challenge unjust policies within the U.S. immigration and criminal legal systems.
