An intimate evening where umami meets simplicity — and vegetables become quietly luxurious.
Japanese Koji Table — Plant-Forward is a small-group tasting and learning salon exploring koji (麹), one of Japan’s foundational fermentation cultures. Koji sits at the heart of many Japanese seasonings, bringing gentle depth, aroma, and a satisfying “quiet richness” — without relying on sugar-heavy sauces.
Over 2.5 hours, we’ll move slowly: learning what koji is, tasting a curated flight of koji seasonings, enjoying seasonal small plates, and finishing with a simple make & taste, and you can bring the experience into your daily kitchen.
What you’ll experience
You’ll:
- Learn the essentials of koji (what it is, how it works, and how to use it at home)
- Taste a guided flight of 4 koji seasonings: Shio-koji (salt koji) • Shoyu-koji (tamari koji) • Onion-koji • Ama-koji (sweet Koji)
- Enjoy a seasonal plant-forward tasting menu of 3 small plates
- Learn simple everyday methods (dress • finish • marinate) to make vegetables taste deeply satisfying
- Make & take: a mini jar of Shoyu-koji (mix-in-jar, easy to grow at home)
- Take home a concise handout (uses, storage, troubleshooting + recipes)
Menu note: the tasting menu may vary slightly depending on seasonal produce and the venue set-up — the focus remains the same: plant-forward, refined, and deeply flavourful.
