Einurð and the Iceland Tourism Cluster warmly invite to a morning seminar about "Food in Tourism" at the 22nd of April in Fenjamýri in Gróska. Seats are limited, so we encourage you to register early.
We will hear keynotes from one international and two Icelandic experts on food in tourism, and will end the session with a panel discussion, where we warmly invite you to participate.
We are proud to announce our keynote speakers:
1. Francesc Fusté-Forné, University of Girona
Francesc is a renowned academic specializing in food and tourism. His research focuses on gastronomy as a driver of sustainable destination development. After having collaborated on Nordic regenerative tourism initiatives, we look forward to welcoming Francesc to Iceland and hear his take on how food experiences can shape more resilient and meaningful tourism future.
2. Gísli Matt (Gísli Matthías Auðunsson) - Laugarás
Gísli is a leading voice in New Nordic cuisine, known for his deep connection to place, seasonality, and Icelandic food traditions. As the founder of Slippurinn, a seasonal restaurant in his hometown in Vestmannaeyjar, he has gained international recognition for creating immersive dining experiences rooted in local landscapes. We look very much forward to hearing Gísli's story.
3. Auður Vala Guðmundsdóttir - Hótel Blábjörg
Auður Vala is the owner of Hótel Blábjörg in Borgarfjörður Eystri, which she and her family transformed from an old fish factory into a unique spa resort. Auður is known for her philosophy and her vision to design guest experiences that combine local culture and the natural beauty of her remote community. Her boundless creativity in using local resources sustainably promises an inspiring glimpse into her world.
