About this Event

It may not be surprising to you that the majority of Americans do not follow a healthy eating pattern, and in addition, the recommended US dietary guidelines do not address the inflammation component of our food system. Physical inactivity, eating mostly empty calories and a generally nutrient-poor/inflammation-rich diet predisposes Americans to many chronic diseases including diabetes, cardiovascular disease, osteoporosis, mental health disease, to name a few. Approximately one-half of American adults have at least one preventable chronic disease and more than one-third of adults and 17% of children and adolescents are classified as obese. Decades of public health awareness promoting eating a "balanced diet" have not resulted in behavior change — energy-rich, nutrient-poor foods comprise an estimated 27% of daily caloric intake in the American diet, and alcohol constitutes an additional 4% of daily caloric intake. Many Americans are exceeding energy (caloric) needs but not meeting micronutrient (vitamin and mineral) requirements that are necessary to FUEL our cells. In addition, our sick culture is over-medicated, often with drugs that can further deplete the micronutrients necessary for our body engines to run appropriately.
