Light as air, subtly sweet and perfectly bite-sized, there is a lot to love about classic French macarons. Perhaps the only strike against them is that they can be intimidating and temperamental for home bakers. Join guest teacher Fred Csibi-Levin for a livestream small group workshop where those fears will be banished—and you’ll never again have to pay bakery prices for individual macarons. Fred, who is a PhD-holding scientist, will start with a true deep-dive into the science of these deceptively tricky treats. You’ll come to understand the technical aspects of meringue—the basis for all good macarons—and get comfortable with the term “macaronage.” You’ll pipe, rest and bake macarons with Fred as your on-hand troubleshooter and cheerleader. In addition to macaron fundamentals, you’ll also learn two of Fred’s favorite flavor combinations: a mango macaron filled with a passion fruit and milk chocolate ganache; and a classic vanilla macaron filled with French vanilla bean buttercream.
About Fred: Chef Fred is a scientist turned pastry chef. Since honing his craft, he has worked as an executive pastry chef at an upscale bakery, consulted for large restaurant groups, bakeries and recently authored his first cookbook Mastering Macarons. He is a chef instructor at Cambridge School of Culinary Arts and teaches in many locations around the country. His brand, Doc Macaron, aims at making baking accessible to everyone by understanding the science behind. He offers workshops, customized pastry training, recipe development and creation of digital assets. Fred’s work has been featured by Buzzfeed, Tastemade, the Pastry Arts Magazine, among others; he has competed on the Food Network and his social media channels have amassed over 300K followers.
Our Small Group Workshops are capped at just 25 attendees and are distinct from our Livestream Classes. As such, they are NOT included with Insider membership.

Immediately after registering, you will get a confirmation email that contains the Zoom meeting log-in information. One week prior to the class (or within 48 hours, if you register less than one week in advance), you will receive instructions on how to prepare ingredients and equipment in order to cook along with us.

Payments for Milk Street livestream workshops are non-refundable. If you find yourself unable to attend, you may transfer the ticket to someone else, but we are unable to refund fees and all payments are final.
