Please join us for a special collaboration between Cheffrey's Kitchen and Artisan Milling Company (AMC)! Chef Kiyoka Nishikawa and Brad Swancy will be educating us on the importance of buckwheat as well as the craft of small-batch stone-milling. Chef Kiyoka will then use AMC buckwheat flour to prepare fresh soba for the class! The demonstration will be followed by a tasting and Q&A session.
Originially from the Nara prefecture in Japan, Chef Kiyoka Nishikawa is a self-taught chef with a passion for cooking traditional multi-course Japanese cuisine (kaiseki). Her journey in Georgia began in 2016 when she was hired as the official Chef for the Consulate General of Japan in Atlanta. Today, Atlanta has the pleasure of finding Chef Kiyoka/Cheffrey's Kitchen at both the East Atlanta Village and Grant Park Farmers Markets as well as through her catering business. Chef Kiyoka is fiercely committed to supporting the local food community and has been a dedicated voluteer at Love is Love Cooperative Farm for over 5 years.
Artisan Milling Company is the latest extension of Riverview Farms. Riverview Farms has been under the stewardship of the Swancy family since the early 1970's and prides itself on quality, tradition and sustainability. They became a certified organic operation in 2000 and continue to exceed organic standards with a focus on soil vitality and maintaining a closed-loop ecosystem across the farm. AMC is currently growing heirloom and non-GMO corn varietals specifically chosen for their milling characteristics. They are also sourcing grains and other varietals of corn from friends in the sustainable farming community in hopes of diversifying their craft.
