Joining him is Chef Founder Tetsuro Maeda, who opened Txispa in Atxondo after a decade at Michelin-starred establishments. Maeda infuses his Japanese culinary roots with local Basque ingredients, earning Txispa a Michelin star within six months, ranking it #85 on The World’s 50 Best in 2025, and being awarded two knives from The Best Chef Awards.
