We are honoured to welcome Andrew Tierney of Torbreck for an evening celebrating the Barossa Valley, thoughtful custodianship and the enduring power of place in Australian fine wine.
Founded with a singular ambition, to establish Torbreck among the world’s leading wine producers, the estate has remained steadfastly committed to its original vision. Rather than following trends or fashions, Torbreck’s philosophy is grounded in provenance, patience and respect for the land. This clarity of purpose has defined the winery for more than three decades and continues to guide every decision, from vineyard sourcing to the cellar.
At the heart of Torbreck lies the Barossa Valley itself. With its Mediterranean climate and over 175 years of winemaking history, the region provides an extraordinary foundation for wines of depth, power and longevity. The Barossa is home to some of the world’s oldest producing vines, including Shiraz, Grenache and Mourvèdre plantings dating back to the 1840s. These ancient vineyards, dry-grown and deeply rooted, yield fruit of remarkable character, concentration and authenticity.
Torbreck sources fruit from a network of exceptional vineyards across the Barossa Valley, each with its own distinct soils, exposures and microclimates. A deep understanding of these sites, how they respond to each season and how farming choices shape flavour, is central to the Torbreck approach.
Patience is paramount. Vineyards are allowed the time they need to reach full physiological ripeness, with harvesting decisions driven by expression rather than schedules. In the winery, this philosophy continues through a gentle, restrained hand. Human intervention is kept to a minimum, with careful handling and limited wine movement to preserve the integrity of each individual block.
In keeping with this respect for vineyard and wine, Torbreck wines are neither fined nor filtered, and barrel maturation is determined by the needs of the wine rather than a fixed timeline. The role of the winemaker is that of custodian, to protect, guide and enhance what the vineyard has already given, allowing each wine to reveal its origin, character and personality over time.

Each ‘Paired’ menu is unique and seasonal, curated to compliment the wines of each producer on show. A sample menu is presented below.

Menus for each dinner will shared with guests ahead of the day. Allergy and dietaries can be catered for with notice.

Paired is our monthly wine supper club celebrating iconic Australian wine producers, seasonal dining and immersive storytelling.
Hosted across Daisy Green’s most distinctive venues, each Paired event spotlights a single Australian vineyard or producer, led by the winemaker, Master of Wine or specialist themselves. Guests are guided through the wines, their provenance and craftsmanship, while enjoying a thoughtfully curated tasting menu designed to complement and elevate each pour.
Every supper club features a selection of wines and paired tasting dishes, served at long tables. Menus are created to let each wine shine, highlighting both the character of the producer and Daisy Green’s signature flavours.
Paired reflects Daisy Green’s long-standing relationship with Australia’s most respected wine producers and its commitment to thoughtful hospitality. Events are hosted in intimate settings across the collection - from candlelit underground spaces to waterside decks and alfresco dining - with each experience tailored to the season, the wines being poured and the spirit of the venue.
