We are honoured to welcome Johann Henschke, sixth-generation winemaker of one of Australia’s most revered wine families, for an evening celebrating heritage vineyards, thoughtful custodianship and the enduring legacy of Australian fine wine.
Born into the Henschke family and raised at the winery, Johann grew up immersed in one of Australia’s most significant wine histories. The eldest child of Stephen and Prue Henschke, he represents the sixth generation of a family whose story spans more than 150 years of winemaking excellence in South Australia’s Eden Valley. Guided by a natural curiosity for science and a deep respect for tradition, Johann chose to continue the family legacy while bringing a global, contemporary perspective to the business.
Johann completed his winemaking degree in Adelaide in 2005 before turning his focus to viticulture, earning a Master’s degree from Geisenheim University in Germany in 2012. Along the way, he gained extensive international experience working with some of the world’s most respected producers, including Leeuwin Estate in Australia, Felton Road in New Zealand, Isole e Olena in Italy and Arietta in the United States. These experiences helped shape his holistic view of site, sustainability and long-term vineyard health.
During his studies in Germany, Johann met his wife Angela Penalba de las Heras, who comes from a long line of winemakers at Bodegas Torremilanos in Ribera del Duero, Spain. In 2013, Johann and Angela returned to Australia, where Johann began working closely with his parents at the family winery. Following personal tragedy, the family is now based in Madrid, with Johann continuing his work with Henschke remotely in his role as Business Development Manager, helping guide the transition from the fifth to the sixth generation.
Founded in 1868, Henschke is synonymous with some of Australia’s most iconic single-vineyard wines. From the ancient, low-yielding vines of Hill of Grace to the power and refinement of Mount Edelstone, the estate is internationally recognised for wines that speak clearly of place, history and longevity. At the heart of the Henschke philosophy is a profound respect for the land, organic and biodynamic farming practices, and a commitment to preserving extraordinary vineyards for future generations.
The evening will offer a rare opportunity to explore Henschke’s wines through the lens of Johann’s global experience and his family’s enduring vision, with a selection of bottles that showcase Eden Valley’s elegance, structure and age-worthiness.

Each ‘Paired’ menu is unique and seasonal, curated to compliment the wines of each producer on show. A sample menu is presented below.

Paired is our monthly wine supper club celebrating iconic Australian wine producers, seasonal dining and immersive storytelling.
Hosted across Daisy Green’s most distinctive venues, each Paired event spotlights a single Australian vineyard or producer, led by the winemaker, Master of Wine or specialist themselves. Guests are guided through the wines, their provenance and craftsmanship, while enjoying a thoughtfully curated tasting menu designed to complement and elevate each pour.
Every supper club features a selection of wines and paired tasting dishes, served at long tables. Menus are created to let each wine shine, highlighting both the character of the producer and Daisy Green’s signature flavours.
Paired reflects Daisy Green’s long-standing relationship with Australia’s most respected wine producers and its commitment to thoughtful hospitality. Events are hosted in intimate settings across the collection - from candlelit underground spaces to waterside decks and alfresco dining - with each experience tailored to the season, the wines being poured and the spirit of the venue.
Paired offers rare access to iconic producers, exclusive spaces within the Daisy Green portfolio, and the opportunity to taste exceptional Australian wines.

Ziggy Green celebrates the life inspirations and ongoing legacy of David Bowie, brought to life through stunning artworks, an elevated dinner menu and first-class cocktails.
The beautiful corner site is an intimate space where food sits at the heart of everything, but where guests are taken on an immersive art journey through Soho’s lost bohemia - including the downstairs bar and immersive art installation - a recreation of the Colony Room Club.
The cosy restaurant is filled with contemporary art celebrating the inspirations and ongoing legacy of David Bowie through artists such as David Gwinnutt, Rick Guest, Terry O’Neill and Charles Moriarty. An impressive light sculpture commissioned by artist Chris Levine (famous for his iconic portraits of the Queen and Kate Moss) sits at the entrance and provides an interactive ‘Ziggy’ moment as you enter the space.
