Come along on a springtime foodie adventure with me through the lanes of Old Delhi and Lucknow. This season is alive with celebrations — a time that celebrate neighbourliness, affection and devotion, embodied in the tempting street fare and home-cooked feasts. Eid, Holi, Navratri and Mahavir Jayanti have just passed, and I have assembled a menu of favourites to honour this holy period.
We’ll begin the evening with Matar Kachori: round, deep-fried wholewheat pastries stuffed with spiced peas, paired with a tangy tomato chutney. For the main course, meat lovers will enjoy Galawati Kabab (legendary lamb mince kababs tenderised with green papaya and layered with fragrant spices and rose essence) served with paranthas, accompanied by Murgh Dum Pulao, cooling raita and hot green coriander chutney. Vegetarians will be treated to Gobhi Masala, cauliflower cooked in the Delhi style with paranthas, alongside Walnut and Paneer Pulao, raita and hot green coriander chutney. The meal concludes with the classic Old Delhi dessert of Shahi Tukde — pieces of bread shallow-fried in ghee, soaked in cardamom syrup and finished with thickened milk and chopped nuts.
