About this Event
Fiery, smoky and bursting with spice, Nigerian street food is a feast for the senses and one of Africa's best-kept culinary secrets. Transport yourself to the vibrant streets of Lagos, Kano and Enugu by getting to grips with 4 Nigerian-style dishes in this class. From grinding aromatic spice blends to mastering the art of caramelisation and fermentation, you'll gain hands-on skills and cultural insight whilst learning how to make traditional recipes in a modern kitchen.
This class is welcoming and suitable for all skill levels. You don't need experience with Nigerian cooking, everything is explained step by step, with plenty of guidance, storytelling, and practical tips along the way. You'll leave with the skills to recreate a complete traditional breakfast at home, plus tips on ingredient sourcing and storage.
Things to know before you book:
- You're welcome to book on your own. If the class is full, I'll pair you with another solo attendee on the day.
- This class includes demos, hands-on cooking, and time to sit down and enjoy the food you've made together.
- This is a hands-on cooking class, so I'm afraid I can't accommodate spectators or provide a waiting area for friends and family. Everyone attending needs to have a ticket and be actively participating.
How we'll spend our time
Toast and grind your own yaji spice blend
Info: discover the aromatic spices that give Nigerian street food its distinctive flavour, then create your own spice mix.
Master the art of suya
Info: learn to skewer thin-cut beef like a Mai Suya, coat it generously with your handmade yaji, then grill it to smoky, spiced perfection.
Get hands-on with fermentation
Info: work with tangy fermented rice batter to create sinasir, traditional Northern Nigerian pancakes with a unique sour flavour.
Caramelise onions and mash beans to perfection
Info: discover the patience and technique behind ewa agoyin's rich, darkened pepper sauce that makes this Lagos street food so addictive.
Create a crunchy cassava salad
Info: mix dried cassava strands with spiced palm oil dressing and decide whether to embrace the pungent fermented flavours of ugba and iru.
Take a seat at the table
Info: enjoy your amala feast with all three soups, served in the traditional style.

Smoky Beef suya
Info: thinly sliced, heavily spiced and grilled (prawn or mushrooms available if you have different dietary requirements )

Ewa agoyin
Info: rich mashed beans with caramelised pepper sauce served with plantain.
Abacha Salad
Info: cassava salad with palm oil dressing and fresh herbs.
Nigerian Inspired Soft Drinks
Info: a complimentary drink from my friends at We Drink Chaps will be available. Choose from zobo, chapman or bitter lemon.
Water and Tea
Info: Water (still and sparking) and tea will be provided throughout the class.
