A Journey Through Ancient Mexico – In Perth
Our tasting menu is a celebration of Mexico’s oldest culinary traditions — a journey that stretches back to the kitchens of the Aztecs and beyond.
We begin with a chilled avocado soup: fresh, cooling, and deeply rooted in Mesoamerican ingredients, served alongside warm jalapeño and cheese bread — a meeting of heat, richness, and comfort.
The heart of the menu follows with a traditional Oaxacan chilli, a dish that speaks of slow cooking, complex spice, and centuries-old regional craft — bold, earthy, and deeply satisfying.
To finish, chocolate returns to its sacred origins. Once revered by the Aztecs, it is paired here with ancho chilli and bright orange — a balance of warmth, bitterness, and citrus that lingers long after the last bite.
Each course is thoughtfully paired with wines to complement and elevate these ancient flavours.
